Welcome to the sweet and savory world of P & J’s Waffle Delight, a unique food truck serving up the best chicken and waffles in the Pacific Northwest (PNW)! We’re Paige and James Meeks, a husband-and-wife team fueled by a love for food, family, and the entrepreneurial spirit.

Our journey began nine years ago when James, inspired by a delicious meal at a California chicken and waffles hotspot, realized there was a gap in the Washington food scene. With a lightbulb moment and a quick call to his then-girlfriend (now wife) Paige, the seed for P & J’s Waffle Delight was sown.

Fueled by passion and fueled by late nights spent perfecting recipes in the kitchen of their best friends, Derek and Bri Wells, Paige and James honed their craft. The initial validation came from enthusiastic co-workers who eagerly devoured their test plates. This initial success gave them the confidence to take their family-owned food truck concept to the next level.

Six years ago, “Old Betsy,” their trusty food truck, rolled onto the scene, bringing P & J’s Waffle Delight to local markets. With every plate served, Paige and James strive to deliver not just delicious food but an unforgettable experience.

Grab a bottle of our very own secret weapon – the LOL sauce (honey garlic, a customer favorite!).
